Ingredients :
3 tbsp olive oil.
1 packet (1 oz) ranch seasoning mix.
1/2 cup grated Parmesan cheese.
2 lbs baby potatoes or small Yukon Gold potatoes.
1 cup shredded cheddar cheese.
1/2 tsp garlic powder.
1/2 tsp onion powder.
1/2 tsp paprika.
1/4 tsp black pepper.
1/4 tsp salt.
1/4 cup chopped fresh parsley (optional, for garnish).
2 green onions, sliced (optional, for garnish).
Directions :
1. Heat the oven to 425°F (220°C).
2. Clean potatoes; cut large ones into bite-sized pieces. Small ones can be halved if too big.
3. In a big bowl, coat potatoes well with olive oil.
4. Sprinkle with ranch mix, Parmesan, garlic powder, onion powder, paprika, pepper, and salt; mix until evenly coated.
5. Arrange potatoes on a lined baking sheet in one layer.
6. Roast for 25-30 minutes, flipping midway, until crispy and golden brown.
7. Remove from oven; sprinkle cheddar cheese over the potatoes.
8. Bake for an extra 5 minutes until cheese is bubbly.
9. Garnish with parsley and green onions if you like.
