Ingredients:
- 1 tbsp olive oil
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or beef broth
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional for spice)
- 8 lasagna noodles, broken into pieces
- Salt and pepper, to taste
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, chopped, for garnish
Directions:
- In a large pot, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.
- Add the diced onion and cook until softened, about 3-4 minutes. Stir in garlic and cook for another minute until fragrant.
- Pour in the broth, crushed tomatoes, and tomato paste. Add basil, oregano, and red pepper flakes (if using). Stir to combine.
- Add broken lasagna noodles to the pot and bring the soup to a boil. Reduce heat to a simmer and cook for 10-15 minutes, or until the noodles are tender. Season with salt and pepper to taste.
- In a small bowl, mix together ricotta, mozzarella, and Parmesan cheeses.
- To serve, ladle soup into bowls and top each bowl with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley.
