Cheesy Italian Lasagna Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 lasagna noodles, broken into pieces
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish

Directions:

  1. In a large pot, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.
  2. Add the diced onion and cook until softened, about 3-4 minutes. Stir in garlic and cook for another minute until fragrant.
  3. Pour in the broth, crushed tomatoes, and tomato paste. Add basil, oregano, and red pepper flakes (if using). Stir to combine.
  4. Add broken lasagna noodles to the pot and bring the soup to a boil. Reduce heat to a simmer and cook for 10-15 minutes, or until the noodles are tender. Season with salt and pepper to taste.
  5. In a small bowl, mix together ricotta, mozzarella, and Parmesan cheeses.
  6. To serve, ladle soup into bowls and top each bowl with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley.
