Cheesy Garlic Zucchini Steaks

Ingredients:

  • 2 large zucchinis, sliced lengthwise into thick “steaks”
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush both sides of the zucchini steaks with olive oil and season with salt, pepper, and Italian seasoning.
  3. In a small bowl, combine the melted butter and minced garlic. Brush the garlic butter over the zucchini.
  4. Place the zucchini steaks on the baking sheet and bake for 10 minutes.
  5. Remove from the oven, top each steak with mozzarella and Parmesan cheese.
  6. Return to the oven and broil for 2-3 minutes until the cheese is bubbly and golden brown.
  7. Garnish with fresh parsley and serve warm.
