Ingredients:
- 2 large zucchinis, sliced lengthwise into thick “steaks”
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Brush both sides of the zucchini steaks with olive oil and season with salt, pepper, and Italian seasoning.
- In a small bowl, combine the melted butter and minced garlic. Brush the garlic butter over the zucchini.
- Place the zucchini steaks on the baking sheet and bake for 10 minutes.
- Remove from the oven, top each steak with mozzarella and Parmesan cheese.
- Return to the oven and broil for 2-3 minutes until the cheese is bubbly and golden brown.
- Garnish with fresh parsley and serve warm.
