Ingredients:
- 1 lb chicken breast, cooked and shredded
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 packet (1 oz) fajita seasoning
- 1 cup cooked rice (white or brown)
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Mexican cheese blend
- 1/4 cup chopped cilantro (optional, for garnish)
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or lightly oil it.
- In a large skillet, heat olive oil over medium heat. Add the sliced bell peppers and onion, and sauté for 4-5 minutes, or until the vegetables begin to soften.
- Stir in the fajita seasoning, and cook for an additional 1-2 minutes to let the spices bloom. Remove the skillet from heat.
- In a large mixing bowl, combine the shredded chicken, cooked rice, diced tomatoes with green chilies, sour cream, and half of the shredded cheddar and Mexican cheese blend. Season with salt and pepper to taste.
- Stir in the sautéed bell peppers and onions until everything is well combined.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Top with the remaining shredded cheddar and Mexican cheese blend.
- Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh cilantro if desired.
