- Ingredients:
For the Tortellini Dish:- 12 oz cheese tortellini (fresh or frozen)
- 2 tablespoons olive oil
- 2 chicken breasts, boneless and skinless
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 teaspoon dried Italian seasoning
- 1 tablespoon fresh parsley, chopped (for garnish)
- Cook tortellini according to package instructions. Drain and set aside.
- While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and sauté the garlic for 1 minute, until fragrant.
- Add the broccoli florets and sauté for 2-3 minutes, until slightly tender but still bright green.
- Pour in the chicken broth, stirring to combine. Let it simmer for 2-3 minutes.
- Reduce the heat to low, then stir in the heavy cream and Parmesan cheese. Simmer for 4-5 minutes, stirring occasionally, until the sauce has thickened.
- Slice the cooked chicken into strips and return it to the skillet along with the cooked tortellini. Toss everything together until well-coated in the creamy sauce.
- Sprinkle with Italian seasoning and fresh parsley, and serve immediately.
