Cheesy Bacon Mississippi Mud Potatoes

Ingredients:

  • 6 medium russet potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine diced potatoes, melted butter, garlic powder, salt, and pepper. Toss until the potatoes are well-coated.
  3. Spread the potatoes in an even layer on a baking sheet lined with parchment paper.
  4. Bake for 35-40 minutes, or until the potatoes are golden and tender.
  5. Remove from the oven, then sprinkle cheddar cheese, mozzarella cheese, and bacon over the potatoes. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted.
  6. Remove from the oven and top with sour cream and chopped green onions. Serve hot.
