Ingredients:
- 6 medium russet potatoes, diced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Directions:
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine diced potatoes, melted butter, garlic powder, salt, and pepper. Toss until the potatoes are well-coated.
- Spread the potatoes in an even layer on a baking sheet lined with parchment paper.
- Bake for 35-40 minutes, or until the potatoes are golden and tender.
- Remove from the oven, then sprinkle cheddar cheese, mozzarella cheese, and bacon over the potatoes. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted.
- Remove from the oven and top with sour cream and chopped green onions. Serve hot.
