Cheesesteak Tortellini in Rich Provolone Sauce

Ingredients:

  • 1 lb steak (ribeye or sirloin), thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 bell pepper (any color), sliced
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package (9 oz) cheese tortellini
  • 1 1/4 cups heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the steak slices, season with salt and pepper, and sear for 2-3 minutes per side. Remove the steak and set aside.
  3. In the same skillet, sauté the onions and bell peppers for 4-5 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  4. Reduce the heat to low, stir in the heavy cream, and bring to a simmer. Slowly whisk in the provolone and Parmesan until melted and smooth. Add red pepper flakes for a bit of heat if desired.
  5. Return the steak and cooked tortellini to the skillet. Toss to coat everything evenly in the cheesy sauce.
  6. Garnish with fresh parsley and serve hot.
