Ingredients:
- 1 lb steak (ribeye or sirloin), thinly sliced
- 2 tablespoons olive oil
- 1 onion, sliced
- 1 bell pepper (any color), sliced
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package (9 oz) cheese tortellini
- 1 1/4 cups heavy cream
- 1 cup provolone cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Directions:
- Cook the tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the steak slices, season with salt and pepper, and sear for 2-3 minutes per side. Remove the steak and set aside.
- In the same skillet, sauté the onions and bell peppers for 4-5 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
- Reduce the heat to low, stir in the heavy cream, and bring to a simmer. Slowly whisk in the provolone and Parmesan until melted and smooth. Add red pepper flakes for a bit of heat if desired.
- Return the steak and cooked tortellini to the skillet. Toss to coat everything evenly in the cheesy sauce.
- Garnish with fresh parsley and serve hot.
