Candied Orange and Chocolate Loaf Cake

  1. Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup candied orange peel, finely chopped
  • 1 tablespoon orange zest

For the Chocolate Glaze:

  • 1/4 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
  3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

  9. For the glaze: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from the heat and stir in the chocolate chips and butter until smooth and glossy.
  10. Drizzle the chocolate glaze over the cooled loaf, allowing it to drip down the sides. Let the glaze set for a few minutes before slicing and serving.
