Buttery Crunchy English Toffee with Chocolate and Nuts

This English toffee is a delightful treat that brings together the perfect balance of buttery, crunchy goodness and rich chocolate. The addition of nuts adds a lovely crunch, making it impossible to stop at just one piece. It’s perfect for holiday gifting or simply as an indulgent snack.

Ingredients:

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)

Directions:

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a medium saucepan, combine the butter, sugar, water, and salt over medium heat. Stir occasionally until the butter is melted and the sugar is fully dissolved.
  3. Increase the heat to medium-high and bring the mixture to a boil. Allow the mixture to cook, without stirring, for about 5-7 minutes, or until it reaches 300°F (150°C) on a candy thermometer.
  4. Remove the saucepan from the heat and carefully stir in the vanilla extract.
  5. Immediately pour the toffee mixture onto the prepared baking sheet, spreading it out into an even layer.
  6. Sprinkle the chocolate chips evenly over the hot toffee. Let the chocolate sit for a few minutes to soften, then spread it over the toffee using a spatula.
  7. While the chocolate is still soft, sprinkle the chopped nuts over the top. Press down gently so they adhere.
  8. Allow the toffee to cool completely at room temperature. Once cooled, break it into pieces.
