This English toffee is a delightful treat that brings together the perfect balance of buttery, crunchy goodness and rich chocolate. The addition of nuts adds a lovely crunch, making it impossible to stop at just one piece. It’s perfect for holiday gifting or simply as an indulgent snack.
Ingredients:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
Directions:
- Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a medium saucepan, combine the butter, sugar, water, and salt over medium heat. Stir occasionally until the butter is melted and the sugar is fully dissolved.
- Increase the heat to medium-high and bring the mixture to a boil. Allow the mixture to cook, without stirring, for about 5-7 minutes, or until it reaches 300°F (150°C) on a candy thermometer.
- Remove the saucepan from the heat and carefully stir in the vanilla extract.
- Immediately pour the toffee mixture onto the prepared baking sheet, spreading it out into an even layer.
- Sprinkle the chocolate chips evenly over the hot toffee. Let the chocolate sit for a few minutes to soften, then spread it over the toffee using a spatula.
- While the chocolate is still soft, sprinkle the chopped nuts over the top. Press down gently so they adhere.
- Allow the toffee to cool completely at room temperature. Once cooled, break it into pieces.
