Ingredients:
- 2 chicken breasts, cooked and shredded
- 1/4 cup buffalo sauce
- 1/4 cup ranch dressing
- 1 tablespoon olive oil
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup Alfredo sauce
- 4 large flour tortillas
- 2 tablespoons butter
- 1/4 cup green onions, chopped (optional)
- Salt and pepper to taste
Directions:
- In a large bowl, combine the shredded chicken, buffalo sauce, and ranch dressing. Stir well until the chicken is evenly coated.
- In a separate bowl, mix together the mozzarella, cheddar, and Parmesan cheeses.
- Heat olive oil in a large skillet over medium heat. Place a tortilla in the skillet and cook for 1-2 minutes on each side until lightly golden. Remove from the skillet and set aside. Repeat with the remaining tortillas.
- In the same skillet, melt 1 tablespoon of butter over medium heat. Place one tortilla back into the skillet and spread a layer of Alfredo sauce over the top.
- Layer with a generous portion of the buffalo ranch chicken mixture, followed by the cheese blend. Top with another tortilla and cook for 2-3 minutes on each side, pressing down gently to ensure the quesadilla is golden brown and the cheese has melted.
- Remove from the skillet and slice into wedges. Garnish with chopped green onions, if desired. Repeat with the remaining tortillas.
- Serve the quesadillas hot with extra ranch or buffalo sauce on the side for dipping.
