Bell Pepper Meatball Subs with Melted Cheese and Marinara

These Bell Pepper Meatball Subs are a delightful twist on the classic meatball sub, offering a healthier yet equally satisfying option. The bell peppers provide a natural sweetness and a slight crunch that perfectly complement the rich marinara sauce, savory meatballs, and melted cheese.

  1. Ingredients:
  • 4 large bell peppers (red, yellow, or green)
  • 12-16 small cooked meatballs (store-bought or homemade)
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish, optional)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with olive oil and season with a pinch of salt and pepper. Place the peppers in a baking dish, cut-side up.
  3. In a medium saucepan, heat the marinara sauce over medium heat. Add the meatballs and cook for 5-7 minutes, allowing them to heat through and soak up the sauce.
  4. Spoon the meatball mixture into the prepared bell peppers, filling each one generously.
  5. Sprinkle mozzarella cheese and Parmesan cheese on top of each stuffed pepper.
  6. Bake in the oven for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  7. Remove from the oven and garnish with fresh basil leaves, if desired. Serve immediately with crusty bread or a side salad.
