These Bell Pepper Meatball Subs are a delightful twist on the classic meatball sub, offering a healthier yet equally satisfying option. The bell peppers provide a natural sweetness and a slight crunch that perfectly complement the rich marinara sauce, savory meatballs, and melted cheese.
- Ingredients:
- 4 large bell peppers (red, yellow, or green)
- 12-16 small cooked meatballs (store-bought or homemade)
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil leaves (for garnish, optional)
Directions:
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with olive oil and season with a pinch of salt and pepper. Place the peppers in a baking dish, cut-side up.
- In a medium saucepan, heat the marinara sauce over medium heat. Add the meatballs and cook for 5-7 minutes, allowing them to heat through and soak up the sauce.
- Spoon the meatball mixture into the prepared bell peppers, filling each one generously.
- Sprinkle mozzarella cheese and Parmesan cheese on top of each stuffed pepper.
- Bake in the oven for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh basil leaves, if desired. Serve immediately with crusty bread or a side salad.
