Directions:
- Pat the fish fillets dry with paper towels and lightly dust them with flour. This will help the batter stick better.
- In a large bowl, whisk together the flour, baking powder, salt, paprika, and black pepper.
- Gradually add the cold sparkling water, whisking until the batter is smooth and has a slightly thick consistency.
- Heat about 1-2 inches of vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).
- Dip each fish fillet into the batter, coating it evenly.
- Carefully lower the battered fish into the hot oil. Fry for 4-5 minutes per side, or until golden brown and crispy.
- Use a slotted spoon to transfer the fish to a plate lined with paper towels to drain any excess oil.
- Serve hot with lemon wedges and tartar sauce, if desired.
