Batter Dipped Fish

Ingredients:

  • 1 lb white fish fillets (cod, haddock, or tilapia)
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1 cup cold sparkling water or club soda
  • Vegetable oil for frying
  • Lemon wedges, for serving
  • Tartar sauce (optional)

Directions:

  1. Pat the fish fillets dry with paper towels and lightly dust them with flour. This will help the batter stick better.
  2. In a large bowl, whisk together the flour, baking powder, salt, paprika, and black pepper.
  3. Gradually add the cold sparkling water, whisking until the batter is smooth and has a slightly thick consistency.
  4. Heat about 1-2 inches of vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).
  5. Dip each fish fillet into the batter, coating it evenly.
  6. Carefully lower the battered fish into the hot oil. Fry for 4-5 minutes per side, or until golden brown and crispy.
  7. Use a slotted spoon to transfer the fish to a plate lined with paper towels to drain any excess oil.
  8. Serve hot with lemon wedges and tartar sauce, if desired.
