Bang Bang Chicken Sliders

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 12 slider buns
  • ½ cup mayonnaise
  • 2 tbsp sriracha sauce
  • 2 tbsp sweet chili sauce
  • 2 cups shredded lettuce
  • ½ cup pickled red onions (optional)

Directions:

  1. Slice the chicken breasts into small, slider-sized pieces. Place them in a bowl with the buttermilk, cover, and refrigerate for 30 minutes.
  2. In a shallow dish, combine the flour, cornstarch, garlic powder, paprika, salt, and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Remove the chicken from the buttermilk and dredge each piece in the flour mixture, coating evenly.
  5. Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.
  6. In a small bowl, mix together the mayonnaise, sriracha, and sweet chili sauce to make the Bang Bang sauce.
  7. Toast the slider buns and assemble: spread Bang Bang sauce on each bun, top with fried chicken, shredded lettuce, and pickled red onions (if using).
  8. Serve immediately and enjoy!
