- Banana-Strawberry Cheesecake Fantasy
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1 cup fresh strawberries, pureed
- For the Topping:
- 1 cup whipped cream
- Fresh banana slices and strawberry halves (for garnish)
- Drizzle of chocolate syrup (optional)
Directions:
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let cool.
- In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract, then incorporate the eggs one at a time, mixing well after each addition.
- Fold in the mashed bananas and pureed strawberries until well combined.
- Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
- Bake for 50-60 minutes, or until the center is set and the edges are lightly browned. The center may still be slightly jiggly, as it will firm up while cooling.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour. Then, refrigerate for at least 4 hours or overnight.
- Before serving, top the cheesecake with whipped cream and garnish with fresh banana slices, strawberry halves, and a drizzle of chocolate syrup if desired.
