For the crust:
- 1 ½ cups vanilla wafer crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the cheesecake filling:
- 2 cups cream cheese, softened
- 1 cup heavy cream
- ¾ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 ripe bananas, mashed
- 2 tbsp all-purpose flour
For the banana pudding layer:
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups milk
- 1 tsp vanilla extract
For garnish:
- 1 cup sliced fresh bananas
- ¼ cup crushed vanilla wafers
Directions:
- Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, combine the vanilla wafer crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of the prepared baking dish to form a crust. Bake for 8-10 minutes, or until the crust is golden. Set aside to cool.
- For the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Add the heavy cream and sugar, and beat until fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the mashed bananas, vanilla extract, and flour until fully combined. Pour the cheesecake filling over the cooled crust and smooth the top.
- For the banana pudding layer: In a medium bowl, whisk together the instant vanilla pudding mix, milk, and vanilla extract. Whisk until the pudding begins to thicken.
- Gently spread the pudding mixture over the cheesecake filling, smoothing it into an even layer.
- Bake for 35-40 minutes, or until the center is set and the edges are lightly golden. Let the bars cool to room temperature, then refrigerate for at least 3 hours to allow the layers to firm up.
- Before serving, garnish with fresh banana slices and crushed vanilla wafers on top.
