For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 24 oz cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe bananas (about 1-2 bananas)
  • 1/2 cup sour cream
  • For the Topping:
  • 1/2 cup caramel sauce
  • 1/2 cup chopped walnuts or pecans
  • 1 banana, sliced (for garnish)
  • Whipped cream (optional, for serving)
  • Directions:
  • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust. Set aside.
  • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, beating after each addition. Stir in the vanilla extract, mashed bananas, and sour cream, and mix until combined.
  • Pour the filling over the prepared crust and smooth the top with a spatula.
  • Bake for 60-70 minutes, or until the center is set and the top is lightly browned. Turn off the oven and allow the cheesecake to cool inside with the door slightly open for about 1 hour.
  • Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight.
  • Before serving, drizzle caramel sauce over the top and sprinkle with chopped nuts. Garnish with banana slices and whipped cream if desired.
