They’re the perfect treat for breakfast, brunch, or as a sweet afternoon snack.

  1. Ingredients:

For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 ripe bananas, mashed
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Caramel Drizzle:

  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar, packed
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Directions:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the mashed bananas, sour cream, eggs, and vanilla extract to the butter mixture. Mix well until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated. Be careful not to overmix the batter.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the muffins are baking, make the caramel drizzle: In a small saucepan, melt the butter over medium heat. Add the brown sugar, heavy cream, vanilla extract, and salt. Stir constantly and bring to a simmer for 3-4 minutes, until the sauce thickens slightly.
  9. Once the muffins are done baking, remove them from the oven and allow them to cool for 5 minutes in the tin. Then, transfer the muffins to a wire rack to cool completely.
  10. Drizzle the warm caramel sauce over the cooled muffins just before serving.
