For the Muffins:

- 1/4 cup unsalted butter, softened
- 2 ripe bananas, mashed
- 1/2 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
For the Caramel Drizzle:
- 1/4 cup unsalted butter
- 1/4 cup brown sugar, packed
- 2 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
- Pinch of salt
Directions:
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the mashed bananas, sour cream, eggs, and vanilla extract to the butter mixture. Mix well until fully combined.
- Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated. Be careful not to overmix the batter.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, make the caramel drizzle: In a small saucepan, melt the butter over medium heat. Add the brown sugar, heavy cream, vanilla extract, and salt. Stir constantly and bring to a simmer for 3-4 minutes, until the sauce thickens slightly.
- Once the muffins are done baking, remove them from the oven and allow them to cool for 5 minutes in the tin. Then, transfer the muffins to a wire rack to cool completely.
- Drizzle the warm caramel sauce over the cooled muffins just before serving.
