Banana Bread Cookies

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips

Directions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas, melted butter, and brown sugar. Stir until smooth.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid over-mixing.
  6. Fold in the walnuts and chocolate chips, if using.
  7. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
