Banana Bread Cookies

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts
  • 1/2 cup semi-sweet chocolate chips

Directions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the ripe bananas until smooth. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing well to combine.
  5. Mix in the mashed bananas.
  6. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Fold in the walnuts and chocolate chips.
  9. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
