- 1/2 cup semi-sweet chocolate chips (optional)
Directions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy. Add the egg and vanilla extract, and mix until combined.
- Stir in the mashed banana until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped walnuts and chocolate chips, if using.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
