Banana Bread Cookies

  1. Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 large ripe banana, mashed (about 1/2 cup)
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup semi-sweet chocolate chips (optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy. Add the egg and vanilla extract, and mix until combined.
  4. Stir in the mashed banana until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped walnuts and chocolate chips, if using.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
