Balsamic Blueberry and Goat Cheese Crostinis

These Balsamic Blueberry Goat Cheese Crostinis are the perfect blend of savory and sweet, with creamy goat cheese and a tangy balsamic blueberry topping that creates an irresistible bite. The crostinis themselves are crispy and golden, while the sweet blueberries provide a burst of flavor that’s elevated by the rich goat cheese and the subtle acidity of balsamic vinegar. A sprinkle of fresh thyme or basil adds a touch of herbal freshness, making these crostinis an impressive and flavorful appetizer.
- Ingredients:
- 1 baguette, sliced into 1/2-inch thick rounds
 - 1 tablespoon olive oil (for drizzling)
 - 1/2 cup fresh blueberries
 - 1 tablespoon balsamic vinegar
 - 1 teaspoon honey or maple syrup
 - 4 oz goat cheese, softened
 - 1 tablespoon fresh thyme, chopped (or fresh basil for garnish)
 - Salt and freshly cracked black pepper, to taste
 
- Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for 8-10 minutes, or until golden brown and crispy.
 - While the crostini is toasting, prepare the blueberry topping. In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, and honey or maple syrup. Stir occasionally and cook for 4-5 minutes, until the blueberries begin to soften and the mixture thickens into a syrupy consistency. Remove from heat and set aside to cool slightly.
 - In a small bowl, soften the goat cheese with a fork until creamy. Season with a pinch of salt and pepper to taste.
 - Once the crostini are toasted and golden, spread a generous amount of goat cheese on each slice.
 - Top with a spoonful of the balsamic blueberry mixture and garnish with fresh thyme or basil.
 - Serve immediately as a delicious appetizer or snack!
