Ingredients:
- 4 salmon fillets (about 6 oz each)
- 1 lb asparagus, trimmed
- 4 tbsp unsalted butter, melted
- 4 garlic cloves, minced
- 2 lemons (1 thinly sliced, 1 juiced)
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Aluminum foil
Directions:
- Preheat your oven to 400°F (200°C).
- Cut 4 large sheets of aluminum foil, large enough to wrap each salmon fillet and some asparagus.
- Divide the trimmed asparagus among the foil sheets, placing them in the center of each sheet.
- Place a salmon fillet on top of the asparagus. Season the salmon and asparagus with salt and pepper.
- In a small bowl, mix melted butter, minced garlic, lemon juice, and fresh thyme. Drizzle the mixture evenly over the salmon and asparagus.
- Top each salmon fillet with 2-3 slices of lemon and sprinkle with chopped parsley.
- Fold the sides of the foil over the salmon and asparagus, sealing it to form a packet. Make sure it’s well sealed to trap the steam.
- Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packets, being cautious of the hot steam.
- Serve the salmon and asparagus with any remaining lemon garlic butter sauce from the packet.
