Baked Salmon in Foil with Asparagus & Lemon Garlic Butter Sauce

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 1 lb asparagus, trimmed
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 2 lemons (1 thinly sliced, 1 juiced)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • Aluminum foil

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut 4 large sheets of aluminum foil, large enough to wrap each salmon fillet and some asparagus.
  3. Divide the trimmed asparagus among the foil sheets, placing them in the center of each sheet.
  4. Place a salmon fillet on top of the asparagus. Season the salmon and asparagus with salt and pepper.
  5. In a small bowl, mix melted butter, minced garlic, lemon juice, and fresh thyme. Drizzle the mixture evenly over the salmon and asparagus.
  6. Top each salmon fillet with 2-3 slices of lemon and sprinkle with chopped parsley.
  7. Fold the sides of the foil over the salmon and asparagus, sealing it to form a packet. Make sure it’s well sealed to trap the steam.
  8. Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Carefully open the foil packets, being cautious of the hot steam.
  10. Serve the salmon and asparagus with any remaining lemon garlic butter sauce from the packet.
