Bacon, Cream Cheese, Cheddar Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, salt, and pepper. Mix until well blended.
  3. Cut a pocket into each chicken breast by slicing it horizontally, being careful not to cut all the way through. Stuff each pocket with the cheese and bacon mixture.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Season the outside of the chicken breasts with salt and pepper, then sear them in the skillet for 3-4 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  6. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
