Ingredients:
- 4 boneless, skinless chicken breasts
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh parsley, for garnish
Directions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, salt, and pepper. Mix until well blended.
- Cut a pocket into each chicken breast by slicing it horizontally, being careful not to cut all the way through. Stuff each pocket with the cheese and bacon mixture.
- Heat olive oil in a large oven-safe skillet over medium heat. Season the outside of the chicken breasts with salt and pepper, then sear them in the skillet for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
