Bacon Brown Sugar Pork Tenderloin

- Ingredients:
- 1.5 pounds pork tenderloin
 - 6 slices bacon
 - 1/2 cup brown sugar
 - 2 tablespoons Dijon mustard
 - 2 tablespoons olive oil
 - 4 cloves garlic, minced
 - 1 teaspoon smoked paprika
 - Salt and pepper to taste
 - Fresh parsley, chopped (for garnish)
 
- Preheat your oven to 400°F (200°C).
 - In a small bowl, combine brown sugar, Dijon mustard, minced garlic, smoked paprika, salt, and pepper. Mix until a paste forms.
 - Pat the pork tenderloin dry with paper towels. Rub the brown sugar mixture evenly over the tenderloin.
 - Wrap the bacon slices around the tenderloin, securing with toothpicks if necessary.
 - Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, sear the wrapped tenderloin for 3-4 minutes on each side until the bacon is crispy.
 - Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
 - Remove from the oven, let rest for 5 minutes, then slice and garnish with fresh parsley before serving.
