  1. Ingredients:
    • 1.5 pounds pork tenderloin
    • 6 slices bacon
    • 1/2 cup brown sugar
    • 2 tablespoons Dijon mustard
    • 2 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste
    • Fresh parsley, chopped (for garnish)
    Directions:
    1. Preheat your oven to 400°F (200°C).
    2. In a small bowl, combine brown sugar, Dijon mustard, minced garlic, smoked paprika, salt, and pepper. Mix until a paste forms.
    3. Pat the pork tenderloin dry with paper towels. Rub the brown sugar mixture evenly over the tenderloin.
    4. Wrap the bacon slices around the tenderloin, securing with toothpicks if necessary.
    5. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, sear the wrapped tenderloin for 3-4 minutes on each side until the bacon is crispy.
    6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
    7. Remove from the oven, let rest for 5 minutes, then slice and garnish with fresh parsley before serving.
