Caprese Stuffed Avocado is a refreshing, healthy, and flavorful dish that combines the creamy texture of avocado with the bright, fresh ingredients of a classic Caprese salad. The ripe avocado halves are filled with juicy cherry tomatoes, creamy mozzarella, and aromatic basil, all drizzled with a tangy balsamic glaze for the perfect bite.

  1. Ingredients:
    • 2 ripe avocados, halved and pitted
    • 1 cup cherry tomatoes, halved
    • 1/2 cup fresh mozzarella balls (bocconcini or ciliegine), halved
    • 1/4 cup fresh basil, chopped
    • 1 tablespoon balsamic glaze
    • 1 tablespoon olive oil
    • Salt and pepper to taste

Directions:

  1. Slice the avocados in half and remove the pit. Use a spoon to gently scoop out some of the flesh from the center of each half to create a small well for the filling. Be careful not to scoop too much—leave enough avocado to hold the filling.
  2. In a bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil.
  3. Drizzle olive oil over the tomato and mozzarella mixture and season with salt and pepper. Gently toss to combine.
  4. Stuff each avocado half with the Caprese mixture, pressing it down gently to fit everything in.
