Asiago Tortellini Alfredo with Grilled Chicken

Ingredients:

  • 12 oz Asiago cheese tortellini (fresh or frozen)
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup freshly grated Asiago cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 tsp nutmeg (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Directions:

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. While the tortellini is cooking, preheat a grill or grill pan over medium-high heat.
  3. Rub the chicken breasts with olive oil, and season with salt and pepper. Grill the chicken for about 6-7 minutes per side, or until cooked through (internal temperature should reach 165°F or 74°C). Remove from the grill and let it rest before slicing.
  4. In a large skillet over medium heat, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the Asiago cheese and Parmesan cheese until melted and smooth. If desired, add the nutmeg for extra flavor.
  6. Add the cooked tortellini to the sauce, tossing to coat evenly.
  7. Serve the tortellini alfredo in bowls, topped with sliced grilled chicken and garnished with fresh parsley. Enjoy!
