Ingredients:
- 12 oz Asiago cheese tortellini (fresh or frozen)
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup freshly grated Asiago cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 tsp nutmeg (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
Directions:
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
- While the tortellini is cooking, preheat a grill or grill pan over medium-high heat.
- Rub the chicken breasts with olive oil, and season with salt and pepper. Grill the chicken for about 6-7 minutes per side, or until cooked through (internal temperature should reach 165°F or 74°C). Remove from the grill and let it rest before slicing.
- In a large skillet over medium heat, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the Asiago cheese and Parmesan cheese until melted and smooth. If desired, add the nutmeg for extra flavor.
- Add the cooked tortellini to the sauce, tossing to coat evenly.
- Serve the tortellini alfredo in bowls, topped with sliced grilled chicken and garnished with fresh parsley. Enjoy!
