Ingredients:
- Cake
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 cup unsweetened applesauce
- 1/2 cup chopped walnuts or pecans (optional)
- Cinnamon Glaze
- 1 cup powdered sugar
- 1/2 tsp cinnamon
- 2-3 tbsp milk (or apple cider for extra flavor)
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce, mixing just until combined. If using, fold in the nuts.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
- To make the glaze, whisk together powdered sugar and cinnamon, then add milk (or apple cider) a little at a time until you reach a smooth, pourable consistency. Drizzle over the cooled cake and let set before slicing.
