Apple Pie Biscuits

Apple Pie Biscuits combine the comforting flavors of classic apple pie with the soft, buttery texture of homemade biscuits. Filled with warm cinnamon-spiced apples and topped with a sweet glaze, these biscuits are the perfect blend of flaky and flavorful. Ingredients:
- Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup buttermilk
- Apple Filling:
- 3 apples (Granny Smith or Honeycrisp), peeled and diced
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
- Glaze:
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Make the biscuits: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Stir in the buttermilk until just combined. Turn the dough onto a floured surface, knead lightly, and roll it out to 1/2-inch thickness.
- Use a biscuit cutter or glass to cut out 8 biscuits. Place them on the prepared baking sheet.
- Prepare the apple filling: In a saucepan over medium heat, melt the butter and add the diced apples, sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until the apples are soft and the mixture thickens.
- Assemble the biscuits: Cut each biscuit in half, spoon some apple filling onto the bottom half, and cover with the top half. Gently press the edges to seal.
- Bake for 12-15 minutes or until the biscuits are golden brown.
- Make the glaze: Whisk together powdered sugar, milk, and vanilla extract. Drizzle over the warm biscuits and serve.
