Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
- 2 cups apples, peeled and diced (such as Granny Smith or Honeycrisp)
- 1/2 cup brown sugar, packed
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
- 1 egg (for egg wash)
Directions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined. Do not overmix.
- In a separate bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
- On a floured surface, roll out the biscuit dough to about 1/2 inch thick. Cut into squares or circles.
- Place a spoonful of the apple mixture in the center of half of the biscuits. Top with the remaining biscuits and seal the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
- Bake for 12-15 minutes or until the biscuits are golden brown.
- Allow to cool slightly before serving warm, optionally drizzled with icing.
