Apple Pie Biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 2 cups apples, peeled and diced (such as Granny Smith or Honeycrisp)
  • 1/2 cup brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)

Directions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined. Do not overmix.
  5. In a separate bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
  6. On a floured surface, roll out the biscuit dough to about 1/2 inch thick. Cut into squares or circles.
  7. Place a spoonful of the apple mixture in the center of half of the biscuits. Top with the remaining biscuits and seal the edges with a fork.
  8. Brush the tops with beaten egg for a golden finish.
  9. Bake for 12-15 minutes or until the biscuits are golden brown.
  10. Allow to cool slightly before serving warm, optionally drizzled with icing.
