Ingredients:
- For the Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (cold, cut into cubes)
- 3/4 cup milk
- For the Apple Filling:
- 2 cups apples (peeled, cored, and diced; about 2-3 medium apples)
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon all-purpose flour (for thickening)
- For Topping:
- 1 egg (beaten, for egg wash)
- Additional sugar and cinnamon (for sprinkling)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Make the Apple Filling:
- In a medium bowl, combine the diced apples, brown sugar, cinnamon, lemon juice, and flour. Toss to coat the apples evenly and set aside.
- Prepare the Biscuit Dough:
- In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix.
- Roll Out the Dough:
- Turn the dough out onto a floured surface. Gently knead it a few times until it comes together. Roll it out to about 1/2-inch thickness.
- Cut and Fill:
- Using a biscuit cutter or a glass, cut out circles of dough. Place half of the circles on the prepared baking sheet.
- Spoon a tablespoon of the apple filling onto the center of each circle. Top with another circle of dough and press the edges to seal.
- Brush and Sprinkle:
- Brush the tops of the biscuits with the beaten egg. Sprinkle with a mix of sugar and cinnamon.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Serve:
- Allow to cool slightly before serving. Enjoy warm, possibly with a scoop of vanilla ice cream!
Tips:
- You can use a variety of apples for different flavors; Granny Smith and Honeycrisp work well.
- For extra flavor, consider adding a pinch of nutmeg to the apple filling.
