Almond Flour Banana Bread

Ingredients:

  • 2 cups almond flour
  • 3 ripe bananas, mashed
  • 3 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts or chocolate chips (optional)

Directions:

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, eggs, maple syrup, melted coconut oil, and vanilla extract. Mix until well-blended.
  3. In a separate bowl, whisk together the almond flour, cinnamon, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet ingredients until combined. Avoid over-mixing.
  5. If desired, fold in the chopped walnuts or chocolate chips for added texture and flavor.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
