Directions:
- In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and well combined.
- Preheat your air fryer to 350°F (175°C).
- Scoop out about 1 tablespoon of dough and roll it into a ball. Place the dough balls in the air fryer basket, flattening each slightly with the back of a fork to create a crisscross pattern.
- Air fry the cookies at 350°F for 6-8 minutes, or until the edges are golden and slightly crisp.
- Remove the cookies from the air fryer and let them cool on a wire rack before serving.
