Nutty Oatmeal Protein Cookies

These Healthy Cookies are a guilt-free treat that combines wholesome ingredients like oats, almond flour, and natural peanut butter for a satisfying snack. With a touch of cinnamon and optional chocolate chips, they’re a great way to satisfy your sweet tooth while fueling your body.
Ingredients:
- 1 1/2 cups rolled oats
 - 1/2 cup almond flour
 - 1/4 cup honey or maple syrup
 - 1/4 cup natural peanut butter or almond butter
 - 1/4 cup dark chocolate chips (optional)
 - 1 teaspoon vanilla extract
 - 1/2 teaspoon cinnamon
 - 1/4 teaspoon salt
 - 1/2 teaspoon baking soda
 - 1 egg
 
Directions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
 - In a large bowl, combine the rolled oats, almond flour, cinnamon, salt, and baking soda.
 - In a separate bowl, whisk together the egg, honey (or maple syrup), peanut butter (or almond butter), and vanilla extract until smooth.
 - Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the chocolate chips if using.
 - Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and gently flatten with your fingers or the back of a spoon.
 - Bake for 8-10 minutes, or until the edges are golden brown.
 - Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
