Corn Fritters

Ingredients:
- 2 cups corn kernels (fresh, frozen, or canned)
 - 1 cup all-purpose flour
 - 1/2 teaspoon baking powder
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1/4 teaspoon paprika (optional)
 - 1/4 cup green onions (chopped, optional)
 - 1/2 cup milk
 - 2 large eggs
 - Oil (for frying)
 
Instructions:
- Prepare the Corn:
- If using canned corn, drain and rinse it. If using frozen corn, thaw it and drain any excess liquid.
 
 - Make the Batter:
- In a large bowl, combine the flour, baking powder, salt, black pepper, and paprika (if using). Mix well.
 - In another bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
 
 - Add the Corn:
- Fold in the corn kernels and green onions (if using) until evenly distributed in the batter.
 
 - Heat the Oil:
- In a large skillet, heat about 1/4 inch of oil over medium heat.
 
 - Fry the Fritters:
- Once the oil is hot, drop spoonfuls of the corn batter into the skillet, flattening them slightly with the back of the spoon.
 - Fry for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan; fry in batches if necessary.
 
 - Drain:
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
 
 - Serve:
- Enjoy the corn fritters warm, with your favorite dipping sauce or a sprinkle of fresh herbs!
 
 
Tips:
- For extra flavor, you can add diced bell peppers or jalapeños to the batter.
 - These fritters can be served with sour cream, salsa, or a yogurt dip.
