Cheesy Alfredo Soup with Lasagna Noodles

Alfredo Lasagna Soup brings together the rich, creamy flavors of classic lasagna in a comforting soup form. The hearty broth, combined with tender pieces of lasagna noodles, savory sausage, and a creamy Alfredo base, creates a deliciously satisfying meal that warms you from the inside out.
- Ingredients:
- For the Soup:
- 1 tablespoon olive oil
 - 1 pound ground Italian sausage
 - 1 medium onion, chopped
 - 3 cloves garlic, minced
 - 4 cups chicken broth
 - 1 can (14.5 oz) crushed tomatoes
 - 1 teaspoon dried basil
 - 1 teaspoon dried oregano
 - ½ teaspoon red pepper flakes (optional)
 - 12 lasagna noodles, broken into pieces
 - 2 cups heavy cream
 - 1 ½ cups shredded mozzarella cheese
 - 1 cup grated Parmesan cheese
 - Salt and pepper to taste
 
 - For the Ricotta Mixture:
- 1 ½ cups ricotta cheese
 - 1 egg
 - ½ cup fresh basil, chopped
 - 1 cup shredded mozzarella cheese
 
 
- In a large pot, heat olive oil over medium heat. Add the ground Italian sausage and cook until browned, breaking it up as it cooks, about 5-7 minutes. Remove any excess fat.
 - Add the chopped onion and garlic to the pot and sauté until the onion becomes translucent, about 3 minutes.
 - Pour in the chicken broth, crushed tomatoes, basil, oregano, and red pepper flakes (if using). Bring the mixture to a simmer.
 - Add the broken lasagna noodles to the pot and cook according to the package instructions, about 8-10 minutes, or until the noodles are tender.
 - Once the noodles are cooked, pour in the heavy cream and stir in the shredded mozzarella and Parmesan cheeses. Cook for an additional 2-3 minutes until the cheese has melted and the soup is creamy.
 - In a separate bowl, mix together the ricotta cheese, egg, chopped basil, and shredded mozzarella for the ricotta mixture.
 - Serve the soup in bowls, and spoon a dollop of the ricotta mixture on top of each serving. Stir gently to combine, allowing the ricotta to melt into the soup for added creaminess.
 - Season with salt and pepper to taste and serve hot.
