Ingredients:
For the crust:
– 2 cups chocolate chip cookie crumbs
– 1/4 cup unsalted butter, melted
For the cheesecake:
– 24 oz (680g) cream cheese, softened
– 1 cup granulated sugar
– 1 cup sour cream
– 1 teaspoon vanilla extract
– 3 large eggs
– 1 cup mini chocolate chips
For the topping:
– Chocolate chip cookies
– Mini chocolate chips
– Whipped cream
– Chocolate sauce
Instructions:
1. Preheat oven to 325ยฐF (163ยฐC). Grease a 9-inch springform pan.
2. For the crust: Mix chocolate chip cookie crumbs and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then cool.
3. For the cheesecake: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla extract. Mix in eggs one at a time. Fold in mini chocolate chips.
4. Pour the batter over the crust and spread evenly.
5. Bake for 60-70 minutes until set. Let cool in the oven with the door cracked for 1 hour.
6. Chill the cheesecake for at least 4 hours.
7. Top with whipped cream, chocolate chip cookies, mini chocolate chips, and drizzle with chocolate sauce.
