Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup shelled pistachios, chopped
- Optional: 1/2 cup white chocolate chips
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a bowl, whisk together flour, baking soda, and salt; set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped pistachios and white chocolate chips if using.
- Spread the dough evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack before cutting into bars.
