Pistachio Sugar Cookie Bars

Pistachio Sugar Cookie Bars are a delightful twist on classic sugar cookies, offering a chewy texture and a nutty flavor that will satisfy any sweet tooth. These bars are not only easy to make but also perfect for sharing at parties or enjoying as an afternoon snack.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup shelled pistachios, chopped
  • Optional: 1/2 cup white chocolate chips
Directions:
  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped pistachios and white chocolate chips if using.
  6. Spread the dough evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack before cutting into bars.
